Vegetable Tikka Masala!

This dish takes about 30 minutes to prepare and is mostly simmering so it’s a great minimal-work-anyone-can-make dish!

I’m a huge Indian food fan so I’m really glad I was able to make a dish that’s traditionally over 400 calories into something healthy and simple to make! I used broccoli, cauliflower, red pepper, onion and zucchini in this. What makes this so simple is the use of Patak’s tikka masala simmer sauce which isn’t too spicy so anyone can enjoy it (I dumped red chili flakes into mine of course) and I made it healthier by using 3 servings of sauce over 4 portions. All the flavor, less calories and fat! I also replaced traditional Naan or basmati rice with Rozoni Smart Taste pasta to make the dish even more filling.
