We made these tonight and they were great, especially with soft egg whites in the middle! They’d make a great alternative to potatoes and you can try topping them with different things like parmesan, chopped onions, garlic, even bacon/ vegetarian bacon. I don’t normally eat items this high in fat but it was a great treat and avocados are incredibly healthy! :)
