I’m making soup tonight but didn’t want to go to the grocery store. Instead I went to the take out section of my university’s cafeteria and got these! The carrots and celery make the base of my soup and I grabbed about a cup each of raw mushrooms and broccoli from the salad bar to make up my veggies! Now I just have to add the vegetable stock, rice, spices and let it cook into deliciousness! :)

Being away at school doesn’t mean you have to settle for what’s there. Get creative, try to think of healthier ways to use what’s available. Try going to the customizable stations and ask for healthy alternatives like cooking with water instead of oil, going light on the sauces, or loading up with extra veggies. Little modifications can make a HUGE difference! :)
