Curry is my favorite simple delicious week-night dish! My version is made healthier by the use of nonfat milk instead of coconut milk and steaming the vegetables instead of frying them. I love that I can throw in whatever veggies I have around, I often end up throwing my leftover veggies in so they don’t go to waste!

I cooked my pasta in the microwave for 9 minutes while the veggies were cooking to make the dish even easier!
