I love testing out these simmer sauces! They’re a great way to make a healthy easy meal! Tonight I tried this one with some fresh cut red peppers (1 pepper worth), a bag of frozen broccoli & cauliflower (I always get them frozen to save money), and 1 cup cubed eggplant. I added garlic powder, red chili flakes, and curry powder because I love spice. It also has Rozoni Smart Taste pasta (8 oz dry).

~The whole thing was only 286 cals, 3g fat, and 10g protein per enormous serving! ~

To make it:
1- cook all veggies with 1/2 cup water and seasoning for 5 minutes
2- prepare pasta (reserve 1 cup of cooking water, in the meantime add simmer sauce to veggies and let cook 5-8 minutes
3.- add pasta and cooking water, let simmer for 5-10 minutes until it’s reduced and thick
Makes 4 servings! :)
