I’m so excited to make my Cheesy Bean Pesto & Eggplant Calzone this weekend! I’m having friends over to make these delicious 280 calorie 8 inch long sandwiches. They require a bit of prep since they use homemade dough but are completely worth the work and really fun to make in groups! Try making a fun night with friends out of it by having a variety of filling options and letting everyone make their own healthy delicious calzone! You can experiment with different cheeses, veggies, or even soy products. I’m making the dough ahead of time so when they get here we can roll, stuff and enjoy! :) Pictured is the first time I made these but I’ll be sure to post pics of mine and my friend’s from this weekend! :)
