Pieces in Progress: Living fit, healthy, & happy!

These mini hand pies were super simple to make. Since the crust was already ready (and delicious) I just had to roll it, fill it and bake it! I used Pillsbury but you can use any brand you like. The filling isn’t super sweet, which is how I like it so that you can really taste the fruit. Overall they were a huge hit with my family and friends (most of them are gone now and I made a double batch!). Get creative with the flavors, just about any fruit would be great but especially berries!
