Pieces in Progress: Living fit, healthy, & happy!

This is one of my favorite dishes to keep around. I make a big double batch of it one afternoon and use them throughout the week. My favorite easy uses are putting them on sandwiches with fresh mozzarella or tossed in salads with nuts & feta. You can use whatever veggies you like best and absolutely feel free to swap out my favorites for yours! Each serving is about 1 cup of veggies. :)
