I made this fantastic dinner for friends last Saturday night. The recipes are all truly easy to make and were a big hit among both my health conscious and not so health conscious friends! I set up a mini mac and cheese bar with oven roasted grape tomatoes, Parmesan and crumbled bacon for everyone to make their own dish (my friends laugh because I find ways to Parmesan on everything!). You can use the Balsamic Roasted Veggie recipe with or without the Balsamic- if you want them plain just skip the step of adding vinegar!
ps- I made these incredible yogurt scones after dinner for dessert- we had a tasting bar! :)
