Pieces in Progress: Living fit, healthy, & happy!

I’ve heard a lot about this so I decided to make my own version and it was so great I made two batches of it! This recipe is vegan but I really enjoyed topping mine with parmesan cheese after. If you want to keep it vegan fresh herbs like basil or rosemary, freshly roasted garlic cloves (just cut off top, cover with tin foil & bake on 400 for 25 minutes), pan roasted nuts, caramelized onions or even a dash of spicy chili oil would all be fantastic on top of this!

You can either boil the cauliflower or steam it (stove-top or microwave), you can even buy the frozen microwaveable cauliflower to make it super easy!
