This is honestly one of the best things I’ve had in a very long time. I started making it a few days ago for breakfast (along with avocado toast for healthy fats & a soy latte for more protein) and wake up every morning looking forward to it! The lemon adds the perfect brightness to this smoothie while the carrots add secret nutrients (seriously, try this with kids, they will never guess how healthy it is!).
If you aren’t vegan you can use honey instead of agave (I use whichever I have on hand). Almond milk would also be a great swap if you don’t have soymilk but I like the little extra protein from soymilk.
Especially this time of year when everyone gets their start-of-fall colds, this smoothie will give you a great vitamin & mineral boost! I can’t wait to try more sneaky-vegetable smoothies! :)
