This is the perfect fall cake! You can make it in other shapes but I used the 9 inch loaf pan to make serving sizes really simple (there’s 18 slices so 18 servings)! I was lucky enough to have some freshly picked apples around and the combination of applesauce (which is used to replace butter/oil) and fresh apples makes this cake truly rich and flavorful! For even more nutrition try using whole wheat flour!
This would make a perfect easy breakfast along with a Greek yogurt, try wrapping the slices up in tin foil after it’s ready for easy grab & go convenience (and to keep it fresh longer)!
