Strawberry Raspberry Compote!

1.- over medium-low heat cook strawberries, raspberries water and sugar for 5 minutes until the fruit mostly liquifies (mash up raspberries as it cooks)

2.- reduce heat to low, add cornstarch and stir until thickened, about 3-5 minutes, be careful to whisk out any clumps

Makes: 16 servings

15 calories, 4 carbs, 0g fat, 0g protein

Pico De Gallo

1.- chop all ingredients, add to large tupperware and refrigerate at least an hour before serving

Makes: 3.5 cups, serving size is 2 Tablespoons

Per 2 Tablespoons: 5 calories, 1 carb, 0g fat, 0g protein

Tzatziki

Chop cucumber, mix everything together, let sit in fridge for a half hour before using!

Makes 10 servings (2 Tablespoons each)

Super easy flavored mayo!

Just spoon all the mayo into a bowl, mix it up and put it back in! I used Chipotle spices in this one but you could make any flavor you want!

Some other ideas:

- garlic herb

- carmelized onion

- lemon pepper

- curry

15 calories per Tablespoon!!

FRESH TOMATO SAUCE!

1- peel tomatoes (this is best done by refrigerating them then cutting off the top and peeling down section by section

2- cut tomatoes into quarters, make sure all the liquid makes it into the pan!

3- cook the tomatoes with 1/4 cup water, basil and garlic for 30 minutes over low heat (3 out of 10)

4- add oregano, put whole mixture in food processor and puree until smooth!

Makes 1 cup of sauce, each 1/4 cup serving:

20 calories, 0 fat, 1.5 protein!

HEALTHY HUMMUS!

1- put all ingredients except basil in food processor and puree until creamy, I use about 1/2 teaspoon garlic powder, 1/2 teaspoon cumin powder and 1/4 teaspoon onion powder

2- roll basil in your hand (no chopping!) and put in with finished hummus, let it sit in fridge for an hour to pick up basil flavor

Makes 32 servings (at 1 tablespoon each)

20 calories, 1g fat, 1g protein

ROASTED GARLIC DIP

Put all ingredients in bowl and use mixer to beat until it forms a creamy dip! I used an electric hand mixer.

Makes 1.75 Cups, each serving  is 2 Tablespoons and:

BEST GUACAMOLE!!

1- puree cooked beans, juice of 1 lime (get as much as you can out of it) and half the avocado

2- hand mix puree with onion, garlic, cilantro and red pepper

3- add salt, spices and remaining lime juice

4- cut remaining avocado half into small (half inch or less) cubes), add to bowl

5- mix well, taste, add salt as necessary

Makes 38 Tablespoons, each tablespoon has:

14 calories, 0.7 fat, 2 carbs, 0.5 fiber, 0.5 protein

PESTO CREAM SAUCE

1- cook white beans and garlic with water until soft

2- put basil, milk and half and half in food processor (I have a magic bullet :P )

3- add cooked beans to food processor, puree until smooth, no chunks or visible leaves

4- as you’re using sauce (in pan with veggies, seafood or pasta) pour parmesan just before it’s done (you want it to melt at the end)

Makes: 4 servings
