Chocolate Orange Meringue Cookies!

This recipe uses the zest of a whole orange to add a delicious citrus tang to the chocolate. Meringues are normally healthy cookies since they’re basically just egg whites, cream of tartar and sugar, but by using cocoa powder you not only get great chocolate flavor but cut down on calories from sugar! You can use this recipe to experiment with all different flavors, coconut or crushed/pureed berries like raspberry would be great too!

This enormous cake came out perfectly! What really lightens this recipe up so much is the use of meringue! The egg whites keep it fluffy while the cream cheese makes it creamy. The raspberries are mashed and stirred in so you get a real tang from them and the lemon finishes it off. This is DEFINITELY a recipe worth trying and worth the cook time!

I used some pieces of chocolate from my sugar free candy jar. I found the best way to break them up is while they’re still in the wrapper! Using the edge of a table helped break them too. They turn out more like chocolate chunk cookies but thats even better in my opinion!

Baking them made my whole room smell like cookies! I couldn’t wait till they came out (I might have snacked on a bit of cookie dough while waiting haha). One great tip is put the dough in wax paper, roll it into a log and freeze it so you can just slice and cook them off as needed!

I let them set for 2 minutes on the tray before moving them to a plate, it helps them hold together better!

Using Greek yogurt in place of butter worked surprisingly well! I usually use light butter to make recipes healthier but I may have to stick with yogurt instead going forward!
From scratch they took less than 20 minutes and used ingredients like egg whites and greek yogurt that I always have on hand. Give them a try and tell me all about it! :)

I wish you all could smell these right now! The chocolate is suspended perfectly in the batter so you get a bit of gooey chocolate with each bite! They take a total of 20 minutes to make and only a few ingredients, seriously try these!! You could top them with a bit of extra sugar but I left them as is and they’re absolutely fantastic! What makes them extra healthy is the use of nonfat greek yogurt instead of butter.
