Protein packed Egg Muffins!
per muffin: 130 calories, 2 carbs, 5g fat, 20g protein!!

This amazing breakfast dish looks impressive, tastes great and only requires 3 minutes of hands on time! Each “muffin” has egg whites, morningstar vegetarian sausage and cheese. They were a big hit with my family and easily adaptable: you can change up the cheese, add veggies, or add spices!
~
You need:
2 mornigstar veggie sausage parties, cooked in microwave and chopped
1/2 cup Sargento reduced fat Mexico cheese blend
12 egg whites
~
To make:
1. Heat oven to 350, spray LARGE muffin tin with nonstick spray
2. Fill 4 muffin tins with even amounts of veggie sausage and cheese, add 3 egg whites to each and stir
3. Bake for 20-25 minutes until eggs are cooked and fluffy

Chocolate Orange Meringue Cookies!

16 calories, 4 carbs, 0g fat,  0g protein!

This recipe uses the zest of a whole orange to add a delicious citrus tang to the chocolate. Meringues are normally healthy cookies since they’re basically just egg whites, cream of tartar and sugar, but by using cocoa powder you not only get great chocolate flavor but cut down on calories from sugar! You can use this recipe to experiment with all different flavors, coconut or crushed/pureed berries like raspberry would be great too!

*These are about 3 inches in diameter*

My 21st birthday is on Sunday so I’m making my own healthy birthday cake! I haven’t picked what kind yet though so reply here to cast your vote for the kind of cake & I’ll post pictures of it and the recipe on Sunday!

After writing this post I realized that I actually want to make all these recipes SO I’m picking one to be my actual birthday cake and then will make the others through the summer as mini cakes (the size of small muffins)! If there’s any other mini cake you’d like to see let me know, if I get enough of them I can even make a page dedicated to cakes/ mini cakes/ cupcakes! :)
