Cheesy Eggplant Calzone with Bean Pesto!

I made these tonight with a friend and they were absolutely fantastic! The recipe calls for fat free cheese but we decided to use half the amount of reduced fat cheese (comes out to the same calories) and add a few strips of red pepper to each. It’s a fun dish to make with friends because everyone can customize their own and makes a fantastic healthy meal! :)

I think it’s really important to take one day a week to be nice to ourselves. Getting healhty, losing weight, working out, we expect a LOT out of our bodies and ourselves. I try to take at least this one day to do things purely to feel good as well as to recognize accomplishments like getting in a good workout, making a delicious healthy meal, or anything else. Sometimes the best rewards are just saying we’ve done something good and recognizing/telling others about that accomplishment!
Here’s what I did:
~ an awesome at home equipment free workout
~ planned a trip to an amazing health food grocery store for the morning (I’ll do a post all about it tomorrow)
~ went to an at-night-indoor-carnival my Uni hosted with some friends
~ took a nap! Seriously, naps are the best things in the world!! :)
